Chef John Besh
Chef John Besh is Chef-owner of August Restaurant on Tchoupitoulas Street in New Orleans. Chef John describes how he began cooking, and explains why cooking appealed to him at a young age. He recalls his early cooking experiences and training in New Orleans and at the Culinary Institute of America. He also touches on food traditions in New Orleans and shares his thoughts about what recipes should not be tampered with. We talk about food trends and Chef John points out that many New Orleans dishes have evolved through the years. Finally, John mentions his new television show and notes that he was flattered that Paul Prudhomme passed on to him this tradition of fine cooking shows that celebrate our unique food and culinary culture.
