Kirk Coco is founder and President of NOLA Brewing Company. Kirk's inspiration to start his own brewery came from two unlikely sources: Hurricane Katrina, and from one of New Orleans' traditionally favorite brews, Dixie beer. However, the reason Dixie beer inspired Kirk to open his own brewery might be surprising. Although Kirk began his efforts to build a brewery in June 2006, he did not actually produce his first beer until almost three years later, in March 2009. Kirk explains why he thinks his beer has been successful in New Orleans and beyond the Crescent City, and he describes the rare combination of qualities a brewmaster must possess. According to Kirk, a great brewmaster has to be both an artist and a scientist.
