Pearl Jefferson has been a waitress and cook for the Coffee Pot Restaurant for the last 50 years. The Coffee Pot is located in the heart of the French Quarter and Pearl gives us some insights into the preconceptions tourists often have about New Orleans. Pearl also describes the calas she makes. These sweet fried rice cakes were sold by women on French Quarter streets in the 19th and early 20th centuries. For locals and visitors alike, calas are reminiscent of Creole Nouvelle Orleans.
