Phat Vu is the owner of one of New Orleans' newest Vietnamese restaurants, Ba Chi Canteen. Even though New Orleans has not traditionally had an abundance of Vietnamese restaurants, locals' growing appreciation for this fresh, healthy cuisine has resulted in several new Vietnamese restaurants. Ba Chi Canteen, located on Maple Street in the University area, is one of the latest to open. Phat Vu explains why he thinks more and more New Orleanians are attracted to this tasty Asian cooking.
